摘要: Abstract Child malnutrition is a major public health burden in Africa, and porridge rheology appears to be important. The flow properties (viscosity) of 8 common indigenous/locally available African complementary porridges plus commercial reference were investigated using rotational rheometer at shear rates 0.001/s – 100/s 40 °C, predict efficacy meeting the nutrient intakes (RNI) for energy protein infants (6–12 months) young children (13–24 months). Energy densities calculated based on solids (g/100 g porridge) which had viscosity 3 Pa s. Porridge apparent showed first-order exponential increase with increasing all rates. Maize, sorghum cassava very high profiles compared Orange-fleshed sweetpotato (OFSP). At low estimated infant oral processing, indigenous except OFSP, below RNI (6–24 High rate seem an important contributor towards child malnutrition. Further work required correlate in-mouth texture porridges, improve their optimize intake.
