摘要: The sesquiterpene alpha-farnesene (1) and its conjugated triene oxidation products accumulate in the skin of apples after harvest are implicated as causal agents superficial scald. Conjugated analogues were synthesized applied to surface Granny Smith either vapors or squalane. Farnesyl hydroperoxide (2a), trienol (2b), endoperoxide (3a), dehydronerolidol (5), cumyl (4) all produced symptoms scald when at nanomolar doses. Scald-inducing activity was dependent on mode application. (2a) most active directly apple skin. Trienol (2b) also induced partially reversed inhibition caused by diphenylamine.
