摘要: Abstract Milk has long been and will always be consumed as part of a healthy balanced diet it contains an impressive array nutrients and, therefore, plays important role in assisting individuals to meet their nutrient requirements. Nowadays, that nutrition science moves beyond the study essential nutrients, interspecies differences, considered symptom evolutionary adaptation different demands neonates, could major biological importance. Research over last twenty years focused on bovine milk. Hence, sheep goat milk still remain appealing area research. The possibility develop easy digestible ovine and/or caprine products, for consumer groups with special needs, such infants, athletes elderly is gathering momentum. Furthermore products may carry specific health effects, when ingested daily diet; they convenient vehicles peptides reduce activity angiotensin-converting enzyme, which involved vasoconstriction therefore blood pressure. presence casein phosphopeptides also enhance physiological significance dairy products. Components non-protein-nitrogen fraction able transmit biochemical messages, polyamines nucleotides have attracted particular scientific attention. Further exploration understand its wholesomeness functions intact warranted. Additionally using or components colostral fractions future product development needs further investigation.
