摘要: The objective of this study was to investigate the incidence PSE pork depending on different stunning conditions at slaughterhouse. carcass weights were significantly lower in normal pork(74.6 kg) than those severe pork(76.9 and light pork(77.0 kg). groups showing or sign had backfat thickness intramuscular fat contents when compared pork(p stunning(33 %) high-voltage stunning(500 V, 72.96 they slaughtered with same slaughtering condition except method. method very effective reduce pork. Therefore, result from suggested that methods a significant effect Also, low-voltage highly recommended control maintain quality.
