Recent advances in the biological production of mannitol

摘要: Mannitol is a fructose-derived, 6-carbon sugar alcohol that widely found in bacteria, yeasts, fungi, and plants. Because of its desirable properties, mannitol has many applications pharmaceutical products, the food industry, medicine. The current chemical manufacturing process yields crystalline below 20 mol% from 50% glucose/50% fructose syrups. Thus, microbial enzymatic methods have been actively investigated, particular last 10 years. This review summarizes most recent advances biological production, including development bacterial-, yeast-, enzyme-based transformations.
