Bio-molecular characterisation of indigenous Oenococcus oeni strains from Negroamaro wine

摘要: The variation in the coding capacity within Oenococcus oeni can have a significant impact on wine quality. detection of several genes involved important metabolic pathways (i.e. citrate, sulphur and arginine metabolisms) was performed 10 indigenous O. oeni strains from Negroamaro wine, red table (Apulia, Italy). These were selected 95 isolates, collected during spontaneous malolactic fermentation, according to results an Amplified Fragment Length Polymorphism (AFLP) analysis. A total 16 screened, most (11) which had never previously been assayed O. oeni. All possessed encoding enzymes such as enzyme (mleA), esterase (estA), citrate lyase (citD, citE citF), transporter (maeP), α-acetolactate decarboxylase (alsD), α- acetolactate synthase (alsS), S-adenosylmethionine (metK) cystathionine β-lyase (metC) resulted negative γ-lyase (metB), ornithine transcarbamylase (arcB) carbamate kinase (arcC). sequence PCR fragments 11 representative strain (ITEM 15929) compared those three reference strains. phylogenetically more similar PSU-1 ATCC BAA1163 than AWRI B429. This study describes new genetic markers useful for detecting potential contribute aroma production investigating population structure species.
