摘要: Abstract Maize or corn is the leading cereal crop in terms of worldwide production and used for an array human food, animal feeds (see Chapter 23 ), biofuels 22 other industrial items. According to FAO, direct food use exceeds 150 million tons/year. Corn originated Mesoamerica prehispanic cultures were responsible developing different ancestral races that have been by plant breeders generation improved varieties hybrids. The main types planted today are yellow, white, sweet, popcorn, blue, waxy, quality protein. In it mainly consumed Africa Americas on cob from traditional industrialized derived dry-milled fractions 15 starch Chapters 19 20 nixtamalized fresh masa dry flour 17 ). Most nowadays consumption countries form porridges gruels produced traditionally milled corn. Industrial dry-millers currently produce whole grain flours refined which further transformed into extruded breakfast cereals, snacks, gruels/porridges, yeast chemically leavened bakery items, beer, distilled spirits. nutritional qualities these greatly impact status many civilizations throughout world.
