摘要: A kinetic study of capsaicin (CAP) toward radicals has been performed using stopped-flow spectrophotometry in detail. The second-order rate constants (k2) for the reaction CAP 2,2-diphenyl-1-picrylhydrazyl (DPPH) and galvinoxyl have measured methanol, ethanol, 2-propanol/water (5:1, v/v), aqueous micellar suspensions containing 5% Triton X-100 (pH 4.0 to 10.0), respectively. decay rates DPPH with increased linearly a concentration-dependent manner homogeneous solutions suspensions. However, k2 obtained an suspension showed notable pH dependence; that is, reactivity increasing value from 4 10. In addition, good correlation between molar fraction (phenolate anion (CAP-O−)/undeprotonated form (CAP-OH)) was observed. These properties are associated pKa CAP. Furthermore, it found CAP-O− reacts about 6 times as fast CAP-OH. results indicate sequential proton loss electron transfer phenolic hydrogen may be responsible scavenging suspensions. Practical Application We clarified constant dependence. evidence indicating free radicals.
