Effect of Surfactant Molecular Structure on Emulsion Stability Investigated by Interfacial Dilatational Rheology.

摘要: Polyglycerol polyricinolate (PGPR) and polyglycerol-2 dioleate were selected as model surfactants to construct water-in-oil (W/O) emulsions, the effect of interfacial rheological properties surfactant film on stability emulsions investigated based dilatational method. The hydrophobicity chain PGPR is polyricinic acid condensed from ricinic acid, that oleic acid. Their dynamic tensions in 15 cycles compression-expansion determined. viscoelasticity was analyzed by amplitude scanning range 1–28% frequency sweep 5–45 mHz under 2% amplitude. It found could quickly reach adsorption equilibrium form with higher viscoelastic modulus resist deformation caused emulsion coalescence, due its branched structure longer hydrophobic chain, thus presented good stability. However, a straight had lower tension, it failed disturbance coalescence because modulus, unstable. This study reveals profound understanding influence stability, providing experimental reference theoretical guidance for future design or improvement surfactant.
