摘要: Nisin tip I lantibiyotik grubuna dahil olan ve Lactococcus lactis'de tanimlanan ilk bakteriyosindir. Kultur ortamlarinda yuksek miktarda nisin uretimi; fermentasyon ortaminin kompozisyonu, pH, ortamda uretilen konsantrasyonu en onemlisi hucrenin gelisimi ile iliskilidir. Bu faktorler dikkate alinarak endustriyel uretim amaciyla kesikli, yari kesikli surekli sistemleri gelistirilmistir. Gida koruyucusu olarak onemli potansiyele sahip nisinin daha verimli uretiminin saglanmasi, hem acidan de bu suslarin starter kultur kullanimi acisindan onem tasimaktadir. derlemede uretimi uzerinde faktorlerinin etkileri belirtilerek kurulmus model sistemler karsilastirilmistir.
