摘要: Abstract The aim of this study was to investigate the antioxidant, anti -ACE and antibacterial activities smooth hound viscera hydrolysates (SHVHs). Viscera, as by-product, were hydrolyzed with crude alkaline protease extract from same species, three commercial proteases a combination endogenous exogenous preparations. All exhibited antioxidant activity, terms radical-scavenging reducing power, metal chelating β-carotene protection, lipid peroxidation inhibition DNA breakage assay, it that medium degree appropriate obtain good capacity. activity improved after simulated gastrointestinal digestion. Besides effect against several Gram-positive Gram-negative bacteria, all varying ACE inhibitory highest one achieved Purafect hydrolysate (IC 50 = 75 μg/mL). overall data suggested could be used potential source natural antimicrobial peptides formulate functional foods.
