Concentrations of seven biogenic amines in sauerkraut

摘要: Abstract Biogenic amines were determined in 121 sauerkraut samples as N -benzamides by micellar electrokinetic capillary chromatography. The divided into four groups: from Czech manufacturers, Austrian household-prepared and sterilized with brine jars. Mean concentrations 174, 146 50 mg kg −1 for tyramine, putrescine cadaverine, respectively. However, very wide variations occurred. lowest found sauerkraut. Histamine levels below 2 44% of above 10 only 19% samples. tryptamine, spermidine especially spermine low. No significant correlations observed between quality parameters amine concentrations. From the nutritional point view, high tyramine should be taken under consideration.
