摘要: Abstract Peptides were designed based on the identified structural motif of most potent antioxidant peptides derived from barley protein. Six contained effective pentapeptide QPYPQ with appended Gln and Pro residues other possessed higher hydrophobicity. The have repetitive sequences Q, P Y to investigate contribution vicinal their capacity. Antioxidant activity synthetic was evaluated in chemical cellular models. Free radical scavenging assays demonstrated positive role QP PY pairs stabilizing peptide radicals. Cellular models revealed that effectively inactivate lipid hydroperoxides intracellular reactive oxygen species. alternating also found inhibition amyloid fibril formation. These results verified addition structure individual side chains, combined effects are important whole peptide.
