Diet and food insufficiency among Hispanic youths: acculturation and socioeconomic factors in the third National Health and Nutrition Examination Survey

摘要: Background: Low socioeconomic status is associated with poor diet, food insufficiency, and child health. Hispanic households have disproportionately low incomes. Acculturation-related changes may augment the effects of poverty on children's diet Objective: The goal was to determine associations that acculturation, measured by parents' language use, income dietary intakes insufficiency among youths. Design: Data 2985 youths aged 4-16 y were from third National Health Nutrition Examination Survey (1988-1994). Nutrient intake data one 24-h recall. analysis controlled for demographic, socioeconomic, program variables. Results: Parents' exclusive use Spanish in bivariate analyses differences energy, protein, sodium, folate percentages energy fat saturated fat. When other factors for, less acculturation sodium Individuals poorer had higher energy. some micronutrients. Although not significant all indicators consistent patterns showed household decreased (odds ratio: 0.4; 95% CI: 0.2, 0.7 adult meal size reduced) increased [odds 5.9 (3.0, 11.7) enough 5.4 (2.2, 13.4) reduced]. Conclusions: Both roles diets insufficiency. Culturally specific public health nutrition education should complement efforts improve financial security low-income households.
