摘要: The activity of immobilized glucose isomerase Streptomyces murinus has been tested batchwise under different conditions in order to gather the related kinetic parameters necessary optimize an enzyme column for continuous production high fructose corn syrup (HFCS). To this purpose, Briggs-Haldane model incorporating apparent first-order inactivation constant used with success. A comparison equilibrium constants and maximum theoretical conversion yields calculated at temperatures those estimated native demonstrates that immobilization favours transformation only T > 70 °C, as a possible consequence combined effect catalysis thermodynamics enhancement. Enzyme also sugar concentrations evaluate substrate protection.
