In most mammals, levels lactase are high during infancy, but fall rapidly following weaning; adults lactase-deficient. man, some populations, including Orientals, Australian Aborigines, and Negroes, deficient as adults, while others, Nilotic Negroes Europeans, maintain consistently throughout life regardless individual lactose intake.
