摘要: West Indian cherry, widely known as acerola in Latin America, is a fruit rich vitamin C and other bioactive compounds. In Brazil, the largest producer of world, processing this results large amounts waste or residues. A method that allows these residues to be reused drying. However, residue has low flowability spouted beds due its density high moisture content. Therefore, study, soybean was used an auxiliary material maintain stability fluid dynamics characteristics food end product. Because process involves mixture solids different sizes, shapes densities, particle segregation may occur. This article reports on study bed, operating with mass fractions static bed heights. Particle analysed, allowing for quantification effect initial concentration degree miscibility. The content phenolic compounds, flavonoids ascorbic acid, well indices at drying times, were also quantified.
