摘要: Abstract The effectiveness of titanium dioxide (TiO 2 )-loaded high-density polyethylene (HDPE) to reduce light-induced oxidation extended-shelf-life milk (2% total fat) was studied. objective determine differences over time in sensory quality, vitamin retention, and oxidative chemistry as a function packaging retail light exposure duration. Effectiveness for protecting quality assessed by evaluation (triangle tests, untrained panel), changes volatile compounds, thiobarbituric reactive substances (TBARS), riboflavin concentration. Milk (2%) stored HDPE packages consisting TiO at 3 levels (low: 0.6%; medium: 1.3%; high: 4.3%) 3°C up 43 d. Light-protected (translucent, foil-wrapped) light-exposed (translucent) served controls. high -HDPE package provided protection similar light-protected control through d 22 exposure, with less consistent performance the medium package. TBARS increased all treatments during storage. Under experimental conditions used, value 1.3mg/L could be considered limiting threshold differentiating oxidized from milk. Riboflavin concentration decreased 10.5% 28.5% packaged past 29 but losses were greater than 40% other packages. protected degradation controlled aldehyde throughout test period.
