摘要: The results of two experiments studying the effects housing conditions on post mortem muscle metabolism and meat quality are presented. In first experiment slaughter pigs (n=71) from different crossings, were raised at a density 0.7 m(2)/animal (10 pigs/pen) either with (enriched) or without (conventional) bedding daily fresh straw. second experiment, animals (n=60) reared under conventional free range (1.25 m(2)/animal, 30 per pen) conditions. Main differences between enriched housed found in biceps femoris (BF) muscle, related to temperature, drip loss colour. Association studies revealed that there significant correlations early (0-4 h) pH glycogen lactate concentrations measured 1 h rigidity, expressed as rigor value. There respect longissimus lumborum (LL), free-range pigs. Early was highest pigs, due low concentrations. relatively fast decline conventionally group resulted increased amounts water exuding meat, by filter paper method. ultimate pH, lowest animals. however, had no effect cooking losses. It can be concluded these enrichment system has little course quality. However, increasing freedom movement applying lower stocking densities, affects metabolism, resulting reduced exudation. Correlations up energetic parameters not sufficiently high useful predict individual carcasses.
