摘要: Abstract Along with the increase in fresh cheese production market, there is a concomitant volume of its by-product, lactic acid whey (LAW). This type especially rich organic acids and ash content, making it more difficult to develop applications for human food. In view hygroscopicity, this fact clearly most dry properly, high level mineralization narrows potential uses nutritional reasons.
