摘要: Fourteen red-fleshed plum (Prunus salicina Erhr. and hybrids) eight peach [Prunus persica (Batsch) L.] genotypes were characterized for their total phenolic anthocyanin contents. Selected rich showed high antioxidant activity, stable colour properties good antimicrobial activity. Results indicated positive correlations between compounds (r2 = 0.83) activity both types of fruit. Colorants prepared from an genotype similar hue to that synthetic colorant FD&C red 3 higher stability than a commercial grape with respect time, temperature pH. Additionally, selected exhibited strong against Salmonella Enteritidis Escherichia coli O157:H7.
