摘要: Among the alternative foaming agents used in food industry are mixtures of cellulose ethers and gums. In particular, iota carrageenan gum (iCG) is a member family sulfated polysaccharides obtained from red seaweeds that gel aqueous solution on heating. This fabrication process has safety advantage using food-grade reagents. The characterization foams produced this way was explored.
