摘要: Abstract It has been suggested that ancient grains show lower immunogenic properties and therefore can be introduced in the diet of non-celiac wheat-sensitive people. In present study we investigated possible difference inflammation caused by feeding Kamut® wheat pasta (KP) compared to modern durum (WP) rats. The effect two experimental diets on oxidative status was also basal condition after an exogenous stress. rats fed WP histological evaluation duodenum morphology evidenced a flattened mucosa, unusual shape shortening villi, high lymphocyte infiltration, while no modifications were detected KP animals. fecal metabolite profiling differently modified diets, suggesting significant changes gut microflora.
