摘要: Purpose – In the backdrop of declining per capita availability pulses, soybean is alternate source to address protein deficiency in India. The study aims assess efficiency soy products available market for meeting daily requirement essential amino acids (EAAs). Design/methodology/approach Extruded products, namely, nuggets, granules, flour manufactured from sprouts, spray-dried milk variants, ready-to-drink (RTD) beverage and silken tofu, were analysed EAAs by high-performance liquid chromatography. addition, these terms an adult weighing 70 kg through a single serving (equivalent 6 g protein) was also computed.
