摘要: Abstract Lipase-catalyzed interesterification has emerged as an attractive process to obtain plastic fats because of its numerous advantages compared the chemical reaction. The use sn -1,3 specific lipases adds even more interesting feature this process, which is related possibility maintaining -2 fatty acid composition natural substrates unaltered. pursuit characteristic in interesterified products by could be threatened a reaction, acyl migration whithin mono- and diacylglycerols. aim study was evaluate occurrence undesired reaction soybean oil:fully hydrogenated oil enzymatic blend. Once confirmed occur, influence different parameters -namely enzyme type concentration, substrate ratio, addition hexane temperature effect- studied. Lipozyme TL IM demonstrated enhancer effect RM IM, that hypothesized correlated with immobilization support material former (silica gel). Acyl also promoted increase biocatalyst concentration media. On contrary, presence hexane, together decrease reduced occurrence. A analysis performed solvent media promoter on migration.
