摘要: Meat and meat products are important vehicles of foodborne illness outbreaks in European countries. Salmonellas were the most commonly reported aetiology infection, although relative importance other agents varied. The factors contributing to increase food poisoning salmonellosis England Wales related both foods eaten their preparation. implication animal origin as principle infection was strengthened by reports associating these with human illness, salmonella animals poultry. current associated poultry suggests that reducing in, or contamination could significantly decrease illness. problem is multi-factorial. Trends driven intrinsic relating microbiological quality standards preparation, extrinsic factors, such ambient temperature, which amplify effects. Many may be amenable preventive activities, including programs reduce educate consumer safe handling. costs estimated between £231 million £331 1988 £143 £205 have been meatborne infection. Reductions modelled irradiation meat, give substantial economic gains.
