摘要: The protective activity of a non-bacteriocinogenic Lactococcus piscium CNCM I-4031 strain against Listeria monocytogenes was investigated in tropical cooked peeled shrimp stored at 8°C modified atmosphere packaging (50% N2–50% CO2). When inoculated alone (L. 107 CFU g−1 and L. 104 g−1), culture target grew very well on reaching maximum cell number 109 after 7 14 days, respectively. In the presence piscium, growth totally prevented 3 days storage. count 3.4 log lower than control 10 until end storage (31 days).
