Chitosan potentiates the antimicrobial action of sodium benzoate on spoilage yeasts.

摘要: Aims: The objective of this study was to determine whether low concentrations chitosan and benzoate in combination could be used enhance the antimicrobial action either compound alone against three spoilage yeasts saline solutions. Methods Results: Saccharomyces exiguus, Saccharomycodes ludwigii Torulaspora delbrueckii were suspended 0·05 0·005% glutamate 0·025% sodium benzoate, or combination, 0·9% solutions at pH 6·2 4·5. Survivor curves constructed from viable counts determined periodically for up 120 min. Chitosan almost doubled extent death caused by alone, about 1–2 log 2–4 log cfu ml–1, depending on pH target organism. Conclusions: Chitosan (0·005%) acted synergistically solutions. Significance Impact Study: These results suggest that natural may useful as an adjunct potentiation biocidal efficacy compounds such benzoates.
