摘要: Taste and smell are very important chemical senses that provide indispensable information on food quality, potential mates danger. In recent decades, much progress has been achieved regarding the underlying molecular cellular mechanisms of taste odor senses. Recently, biosensors have developed for detecting odorants tastants as well studying ligand-receptor interactions. This review summarizes currently available biosensing approaches, which can be classified into two main categories: in vitro vivo approaches. The former is based utilizing biological components such olfactory tissues, cells receptors, sensitive elements. latter dependent signals recorded from animals' signaling pathways using implanted microelectrodes living animals. Advantages disadvantages these differences terms sensing principles applications highlighted. current challenges, future trends prospects research biomimetic sensors discussed.
