摘要: To meet the increase in demand for food and health-related products, there was a promptly growing trend pharmaceutical manufacturing industries recent years. Microbial process plays main role of products enhancement taste, aroma, shelf- life other probiotic applications. Microbes microbial enzymes were used ingredients/products through biocatalysis biotransformation also degradation toxic chemical compounds industry waste. From chosen environment, only small fraction microbes can be cultured laboratory conditions, afore mentioned critically depends on these cultivable communities to make use metabolites/enzymes. The metagenomics, culture independent technique has become revolutionary tool biotechnological applications, especially industries, which takes an advantage identification all possible genomic information from microbiome apply them needs industry. In years, metagenomics been adopted screen antimicrobial resistant genes, ingredients chemicals wastes. this book chapter, we discuss application probiotics, detection resistance developed by pathogens present natural/ packed foods. Also various metagenome derived (nitrilases, β-glucosidase, lipases esterases) applied chiral synthesis recalcitrant (nitroaromatic, Cyanide) overview predicting novel genes uncultivable microbiome.
