摘要: RESUMEN El procesado minimo de granada roja es una alternativa para incrementar su consumo, tambien posibilidad uso frutas agrietadas que causa significativa perdidas en postcosecha. Con el objetivo disenar tecnologia sencilla minimo, se estudio efecto la condicion fruta agrietada o intacta; presentacion (gajos granos libres) y temperaturas almacenamiento (0, 5 10 oC) calidad fisicoquimica microbiologica durante 20 dias. En agosto 2007 colectaron frutos huerta comercial criolla Apaseo Alto, Guanajuato. Se lavaron con agua despues solucion hipoclorito sodio (200 ppm) min. seccionaron extraer gajos cada carpelo desgranaron, fueron tratadas nuevamente (50 por min, escurridas envasadas contenedores plastico tapa 200 100 g (para respectivamente) almacenaron a 0, oC. Cada dos dias analizaron; color, azucares totales, oBx acidez, asi como presencia bacterias mesofilas aerobicas, coliformes, hongos levaduras. La temperatura 0 oC, conservo las muestras intactos hasta sin cambios apreciables calidad. Las tuvieron menor vida anaquel (18 oC); redujo 12
