摘要: AbstractLipases are esterases able to hydrolyze water-insoluble esters such as long-chain triglycerides. These enzymes also catalyze the formation of (esterification) and exchange ester bonds (transcsterification) when present in nonaqueous media. Lipases display a high degree specificity enantioselectivity for esterification transesterification reactions, thus their potential uses industry very wide. industrial applications have been an important driving force lipase research during last several years, particular study lipases produced by microorganisms.
