摘要: The present invention provides a biological method for removing the color and odor causing components of stevia extracts producing sweetener product which retains beneficial anti-oxidant activity crude extract. Bacteria fungi are capable degrading plant pigments polyphenols responsible in extracts. Pleurotus ostreatus was employed as test organism reduced by 70% 50% yellow-brown (470 nm) green (670 region. Total polyphenol content 40% but free radical scavenging extract maintained. Any bacteria or fungus polyphenols, do not degrade stevioside, may be utilized this method.
