摘要: Legumes are important for the diet of a significant part world s population; they good source protein, carbohydrates, minerals and B-complex vitamins. In this sense, soybean is an legume because it has high protein (35-48%) with nutritionally balanced amino acid profileso their products commonly used as vegetable worldwide great proportion high-quality oil (15-22%)[1].
