Effect of pH, concentration, and temperature on the strength of cytoplasmic protein foams

摘要: The strength of foams generated from solutions red clover cytoplasmic protein is dependent on pH, concentration, arid temperature. variation foam as a function these three parameters has been studied and results indicate that the onset stability occurs over very short concentration temperature ranges. A phase diagram for proposed which defines differences between stable unstable states in terms show above 40°c only are generated, irrespective concentration. Below 40°c, can be provided greater than certain critical system. A possible implication bloat studies suggested.
