摘要: Abstract The influence of hexametaphosphate (HMP), oxalate, citrate, and ethyl-enediamine-tetraacetate (EDTA) on salt equilibria in milk was studied by continuous equilibrium dialyses containing up to 30mm these agents. Alteration determined the rate diffusion calcium phosphorus from milks various concentrations Added sodium citrate dissolved a portion all inorganic phosphate. Oxalate EDTA made diffusible milk. HMP unique that were less with small amounts HMP. Excessive additions induced decomposition colloidal salts similar which occurred citrate. Certain still remained nondiffusible phase after dialysis, indicating it combined casein complex.
