摘要: Abstract Capillary electrophoresis using an untreated fused-silica capillary and a low-pH buffer containing urea hydroxypropyl methyl cellulose was used to follow the proteolytic action of neutral protease Bacillus subtilis on isolated casein fractions whole milk (CN) samples. Electrophoretic analysis showed that this caused intense hydrolysis α -CN, β -CN κ -CN. The breakdown products due attack γ 2 A, 1 B, A , 3 -CN-I s s1 -CN-I, s0 f(1–23) were separated.
