摘要: Abstract Acrylamide (AA) is a heat-generated food toxicant formed when starchy foods are fried or baked. This study describes simple and sensitive liquid chromatography–tandem mass spectrometry assay for the simultaneous quantification of AA its active metabolite, glycidamide (GA) in rat plasma, urine, 14 different tissues. The utilized method protein precipitation achieved lower limit 5, 10 25 ng/mL 10, 20 100 ng/mL GA tissues respectively. was fully validated to demonstrate linearity, sensitivity, accuracy, precision, process recovery, stability using matrix matched quality control samples. mean intra- inter-day accuracy 91.6–110% 92.0–109% GA, precisions were ≤10.9% ≤8.60% GA. developed successfully applied pharmacokinetic following intravenous oral administration rats. Tissue distribution characteristics also determined under steady-state conditions.
