摘要: Protein phase transitions in drying sessile drops of protein-salt-water colloidal systems were studied by means optical and atom-force microscopy. The following sequence events was observed during drop drying: attachment a to glass support; redistribution due hydrodynamic centrifugal stream; protein ring formation around the edge; spatial structures inside that pass into gel middle drop; salt crystallization shrinking gel. It assumed rapid over circle high volume fraction low strength interparticle attraction leads glass, whereas forms only at very strong between particles. Before gelation, particles form fractal clusters. In dried salt-free solutions, no visual observed. Structural evolution protein-salt aqueous solutions is discussed on basis experimental data.
