摘要: A water-soluble exopolysaccharide (EPS) was produced by Leuconostoc ctireum NM105 from homemade manchurian sauerkraut. After culturing the strain in Man-Rogosa-Sharpe medium containing 5% sucrose at 25°C for 48h, EPS purified and a yield of 23.5g/L achieved. The consisted exclusively glucose weight-average molecular weight 1.01×10(8)Da. structural characterization determined FT-IR, (1)H, (13)C two-dimensional NMR spectroscopy demonstrated that glucan contained α-(1→6)-linked d-glucopyranose units, 2,6-linked units terminal α-d-glucopyranose ratio 1:1:1. microstructure dried dextran appeared sheet-like smooth glittering highly branched surface. showed high water solubility excellent retention. All results suggested α-(1→2) might have potential to serve as valuable polymers applied foods, cosmetics other fields.
