摘要: BACKGROUND: Chitosan edible coating was used in an attempt to extend the storage life of pomegranate arils during 12 days at 4 °C. Prior storage, treated were dipped 0.25, 0.5 and 1% (w/v) chitosan aqueous solutions (v/v) acetic acid for 1 min, while control distilled water with acid. RESULTS: inhibited bacterial fungal growth on surface arils. The content coated maintained storage. reduced increase total soluble solids (TSS) titratable acidity (TA) lowest TSS TA detected chitosan, which highest TSS/TA ratio after In contrast, application delayed decrease phenolics, anthocyanins antioxidant capacity results also showed that suppressed monophenolase activity polyphenol oxidase (PPO) pyrogallol substrate diphenolase PPO dopamine hydrochloride substrate, but pyrocatechol increased storage.
