摘要: Postharvest heat treatments (hot water or hot air treatment) may be applied to horticultural crops control fungal diseases, insect infestation and reduce chilling injury in cultivars susceptible low storage temperatures. The present study investigated the influence of (53 degrees C for 60s) treatment (38 24h) two typical Sardinian apple varieties, cvs. Miali Caddina, on composition lipophilic extracts peel as well antioxidant activity ethanolic both pulp. varieties were almost similar resulted dominated by presence triterpenes being ursolic oleanoic acids main metabolites analysed fruits. chemical analysis obtained from different heat-treated samples each variety revealed no significant difference relative distribution triterpene components with respect untreated samples. This strongly suggested that does not affect terpene metabolite profile fruit peel. On other hand, pulp treated was significantly In particular, Caddina levels consistently higher than affected conditions. Differently, sample
