摘要: Contents of total and damaged starch were observed, together with lipid protein contents, during the evaluation abiotic stresses influence (dry conditions, high temperature, low pH value) on yield seed wheat. not changed. Seed growing in filial generation (2nd year) from stressed seeds becomes evident decrease lipids (0.71 times) increase 1.31 times. Changes proteins contents minor. The assay procedures used for microwave treatment chemical physicochemical characteristics rice. Microwave did affect content rice, but increased absorbed energy temperature treatment, chiefly moisture 30% a 100°C. accordance amylographic rice flour. starch, a-galactooligosaccharides trypsin inhibitors activity also monitored germinated pea seeds. without significant changes, whereas α-galactooligosaccharides decreased up to 42% value before inhibitor 56-60%. These changes are favourable nutritional point view.
