摘要: The goal of this work is to evaluate the formation side α-dicarbonyl compounds in high content sugar samples. These may be originated from fructose and glucose, during different derivatization reactions. D-glucosone, 3-deoxyglucosone, glyoxal, methylglyoxal, using three agents (5,6-diamino-2,4-hydroxypyrimidine, 2,4,5-triamine-6-hydroxypyrimidine, o-phenylenediamine), ultra-high pressure liquid chromatography combination with MS detection, has been assessed presence levels monosaccharides. 2,4,5-triamine-6-hydroxy-pyrimidine appears most suitable for analysis compounds, kind food samples, was selected as optimum reagent quantification these compounds. validation method performed through establishment external standard calibration curves analytical figures merit, it showed good linearity over a wide concentration range (r(2)>0.99), limits detection lower than 42μgL(-1) 142μgL(-1), respectively. validated successfully applied determination target honey intraday interday assay variability real samples below 2.3 5.7%, respectively, all analytes.
