摘要: Quince fruit has many benefits to human health and is excellent source of bioactive compounds. The 15 quince genotypes stored at 2 °C for 5 mo study quality changes during cold storage. Fruit were sampled monthly 20 24 h. ascorbic acid (AA), total phenol (TP), flavonoid (TF) concentrations, antioxidant activity (TAA), flesh browning (FB) incidence, polyphenol oxidase (PPO), peroxidase (POX), superoxide dismutase (SOD) activities measured A high variation in compounds was observed across genotypes. range 26.8 44.4 mg/100 g FW AA, 86.7% 98.2% TAA, 157.7 380.7 mg GAE 100(-1) TP, 5.3 10.7 TF harvest time. overall TF, SOD decreased while PPO POX increased FB first after 4 thereafter the index different Higher content may prevent or reduce so that a negative correlation found between SOD.
