摘要: Vitamin A activity of plant provitamin carotenoids is uncertain. The objective was to determine whether can sustain or improve vitamin nutrition during the fall season in kindergarten children Shandong province China. serum concentration 39% < 1.05 µmol/L and 61% = µmol/L. For 5 d/wk for 10 wk 22 were provided ˜238 g green-yellow vegetables/d 34 light-colored vegetables/ d. Nineteen maintained their customary dietary intake which included 56 224 vegetables/d. Octadeuterated tetradeuterated given before after interventions respectively enrichments plasma determined by gas chromatography--mass spectrometry. Serum retinol carotenoid concentrations measured HPLC. Carotenoid improved consumption vegetables. sustained group fed vegetables but decreased (P 0.01). isotope-dilution tests confirmed that total-body stores 27 µmol (7700 µg retinol) per child on average 0.06). Green-yellow provide adequate diet protect them from becoming deficient seasons when food source limited. (authors)
