摘要: Abstract The effect of high-shear homogenization on the rheological and particle size characteristics three species gum tragacanth (GT) was detected. Dispersions were subjected to 0–20 min treatment. Static light scattering techniques tests used study results showed that process caused a decrease in parameters for all species, but interestingly, apparent viscosities increased. highest increase viscosity found solutions containing Astragalus gossypinus, which possessed insoluble fraction. viscoelastic behaviors dispersions also significantly influenced by process.
