摘要: There may be a variety of reasons why it is necessary to examine foods qualitatively and/or quantitatively for microorganisms. The principal objectives microbiological testing are ensure: (1) that the food meets certain statutory standards; (2) internal standards set by processing company or external required purchaser; (3) materials entering factory standard meet agreed with supplier; (4) process control and line sanitation being maintained. test methods used monitor quality themselves also varied largely dependent on analysed. It convenient list tests under following general headings: 1. Estimations total numbers microorganisms. 2. Estimations indicator organisms. 3. Examining for, estimating of, spoilage organisms other selected groups. 4. Examining poisoning food-borne pathogenic microorganisms. 5. Examinations metabolic products microorganisms; this often requires more sophisticated techniques only available in larger laboratories.
