Effect of drying conditions on energy utilization during cocoyam drying

摘要: Cocoyam samples soaked in sodium metabisulphite (SM) and water blanched (WB) were oven dried at 50, 60 70° C microwave power levels of 385, 540 700 W while untreated sun dried. The effect drying on selected properties cocoyam was studied. time generally reduced with increase temperature level used. use SM pretreatment resulted lower times compared WB pretreatment. Effective moisture diffusivity values (D eff ) for all the conditions varied from 5.27 x 10 -8 to 2.07 -6 m 2 /s had higher than samples. Activation energy 37.41 KJ/mol 61.79 that 38.59 41.91W/g respectively. consumption 125.1 142.8 kWh 308 396.7 Wh specific requirement 86.2 106.5 kWh/kg 1.49 2.03 KJ/kg
