摘要: The aim of the present paper is to review knowledge concerning possible use entire male pigs for meat production, with particular emphasis on current situation in EU countries. Raising has a number advantages including lower production costs, leaner carcass, reduction output pollutants manure and improved welfare animals. However, it also drawbacks, most them quality, boar taint being serious problem. A recent international study involving 7 countries shown that higher proportion consumers dissatisfied than gilt pork (31.9 vs 26.0% odour; 21.5 18.5% flavour). perception differs widely between Skatole, compound intense faecal odour, androstenone, steroid urinary are held as responsible taint. above-mentioned demonstrated skatole contribution androstenone consumer unpleasant odours, while both compounds have similar contributions flavours. In situation, high reared exhibit skatole/androstenone levels result significant increase dissatisfaction, comparatively pork. Fat mostly dependent feeding rearing factors, fat content determined by genetic factors. Besides economic associated males, animal issue may some day regulations prohibiting castration piglets currently performed. This would lead degradation quality unless something done control An integrated approach should be considered actions taken at three slaughter processing. On short range, immunocastration offer viable way drastic incidence pig populations. long selection against cheaper more readily acceptable. Artificial noses related techniques interesting possibilities assessment line, however, further developments needed order determine whether they can used industrial conditions. Tainted through processing, however specific studies conducted each many products processed from meat.
